Our ginger root is plump and light skinned in color like the photo above-- signs of freshness. It will store for extended periods in a cool place or the veggy bin of your fridge. I keep ginger root in my freezer and grate it into smoothies and stir fries.
With a microplane zester, frozen ginger quickly grates off like fine snow flakes.
