I decided to try out this Allie's Awesome gluten-free pancake mix the other day. It has rice flour, buckwheat flour and a few other natural ingredients. By the way, buckwheat isn't really wheat at all, it's actually a ground cover crop related to rhubarb and sorrel used for its seeds, which is what buckwheat flour is. And it's gluten-free.
Anyway, you learn new things every day.
So I made the pancakes using the mostly standard batter recipe in adding an egg, milk and oil. The mix contains baking powder as it should.
The pancakes weren't as light and fluffy as I'm used too, but they look like regular pancakes, taste great and fill you up! They have texture and good nutritional content.
So, there is hope for pancake lovers going gluten-free!
