Pasta Sauce Tasting With Quinoa Meatless Meatballs!

Come in to Kennewick Grocery Outlet this Friday, March 14, at 2:00PM for a special sauce tasting from our current pasta sauce selection. Don't worry about the above photo-- we're sampling more than just 2 sauces, okay.

Quinoa (pronounced kinwah or keen-wah) meatless meatballs will be our featured sauce platform. We recently received a supply of red quinoa in 1lb. packs, and are discovering healthy and tasty ways to enjoy this stuff. Quinoa is a highly nutritious seed that you prepare & serve just like rice. But unlike rice, it is a complete protein source. It's also gluten-free.

The top photo shows actual quinoa balls, made by yours truly. Here's how to make 'em yourself:

Ingredients:
1 lb. pack Red Quinoa 2 cups
(makes approx 40 golf ball size)
3 cups bread or cracker crumbs 
For gluten free, substitute 3 cups crushed regular Cheerios
4 eggs
1 cup grated parmesan cheese
3 Tbs Italian herb blend i.e. basil, oregano & fennel seeds  
2 Tbs Worchestershire sauce
3 garlic cloves, minced or 1 Tbs garlic powder.
1.5 tsp salt
1 tsp pepper

Directions:
Bring 4 cups lightly salted water to a boil in a 6 qt sauce pan. Whisk in quinoa. Return to boil for 3 minutes. Turn heat to low/med low. When boil simmers down, cover the pan for 25 minutes. After 25 min, remove from heat and keep covered for additional 20 minutes.

Dump cooked quinoa into large mixing bowl and allow to cool, uncovered; stirring periodically until warm to touch. Fold in ALL remaining dry and liquid ingredients including eggs (minus shells... yeah, that's a joke).

Start rolling in golf ball sizes, placing on a large, lightly greased/sprayed cookie sheet. You should end up with 40-44 balls. Bake in pre-heated 350 degree oven for 30 minutes.

Add to your favorite sauce and serve with pasta or however you like to accompany meat balls. This same recipe also works as a stuffed peppers filling!

NOTE: If you'd rather try substituting quinoa for meat in your own favorite meatball recipe, I just recommend increasing your usual seasoning proportions a bit and using the Worchestershire sauce to help bring in a savory & meat-like flavor.
